    Greek Pasta Recipe

    preparation time: 30'

    Cooking time: 6-7'

    for 4 people 

    Fusilli with finely chopped Mediterranean vegetables & garlic-infused olive oil


    - 330g fusilli made by Serafim chickpeas, green lentils and black beluga

    - 60ml greek olive oil

    - 1 clove of garlic 

    - 1 small onion, finely chopped

    - 100g zucchini cut into small sticks   

    - 100g carrot grated 

    - 100ml white wine

    - 16 cherry tomatoes sliced into 4

    - 120g Florina peppers cut into small sticks

    - 3 tablespoons parsley finely chopped

    - salt, freshly ground pepper



    On a cutting board cut the garlic into thin slices with a sharp knife and place it in the olive oil.

    Add fusilli in a large pot of salted boiling water and boil for 4 minutes.

    When greek pasta is ready, remove it from heat and strain it well.

    On another cutting board, cut the zucchini and Florina pepper into thin little sticks and rub the carrot on the thick part of the grater.

    Place a deep nonstick pan on high heat and warm it well, then add half of the greek olive oil.

     Saute the chopped onions with the zucchini, carrot and Florina peppers for 2-3 minutes.

     Then add the white wine and the cherry tomatoes and stir in the fusilli, add some salt and freshly ground pepper and continue cooking for 1-2 minutes.

     Remove  the pan from heat, add the remaining greek olive oil along with the chopped parsley, stir one last time and serve.
